Creamy Coconut Curry Kale
It seems like everyone is going crazy over kale these days; and for good reason, Kale has an abundance of nutrients and is a great addition to any healthy eating lifestyle. Here is a tasty Caribbean inspired dish that is sure to fulfill your kale craving.
• 1 medium bushel of Kale (washed and chopped)
• 1 medium onion chopped
• 1 clove of minced garlic
• 1 inch of minced ginger
• ½ green bell pepper chopped
• 3 tbsp. of Jamaican Curry Powder
• 1 scotch bonnet or habanero pepper
• Salt to taste
• ¼ teaspoon of cayenne pepper
• 1 teaspoon of Mrs dash
• 1 teaspoon of thyme
• 1 teaspoon of oregano
• ½ teaspoon of basil
• 1 can of coconut milk
• 1-2 tbsp. of Extra Virgin Olive Oil
• 1 bay leaf (optional)
Step 1: Heat skillet with Extra Virgin Olive Oil for 1-3 mins on med high heat.
Step 2: Add onions and let them get slightly caramelized.
Step 3: Add garlic and let cook for 30 secs
Step 4: Add bell peppers and let cook for 45 secs
Step 5: Add ginger and salt then stir.
Step 6: Add curry powder, cayenne pepper, oregano, thyme, basil, Mrs. dash, and scotch bonnet pepper
Step 7: Add 1 15 oz can of coconut milk and let the mixture cook down for 7-10 mins on med-low heat
Step 8: Add Kale and let it cook for 5-7 mins or until tender and bright green.
